The Sofritas Protocol: Dump-and-Go Spicy Braised Tofu (v1.0)

Ingredients

Protein

  • 2 blocks Extra-Firm Tofu — drained

The “No-Blender” Sofritas Sauce

  • 1 can (14-15 oz) Fire-Roasted Diced Tomatoesdo not drain
  • Chipotle Peppers in Adobo (7 oz can)
    • Mild: 1-2 peppers + 1 tbsp adobo sauce
    • Bachelor Strength: 3-4 peppers + 2 tbsp adobo sauce
    • Full Send: whole can

Seasonings

  • 1 tsp Cumin
  • 1 tsp Garlic Powder
  • 1 tsp Salt

Liquids

  • 1/2 cup Waterdeglaze + burn prevention

Oil

  • 1 tbsp Oil (avocado/canola/olive) — for sautéing

Optional “No-Chop” Upgrades

  • 1 cup Frozen Pepper/Onion Mixbulk + “sofrito vibe” without chopping
  • 1 can Black Beans (drained) — more lunches
  • Lime juicebright finish after cooking

Instructions

Phase 1: Prep (2 minutes)

  1. Drain + Quick Press: Drain tofu. Wrap in paper towels and press for 1 minute (hands or a plate). You’re not “fully pressing” it—just removing surface water.
  2. Bachelor Crumble: Crumble the tofu into rough “ground meat” bits with your hands (right into a bowl or plate). Perfect cubes are not the goal.

Phase 2: Sauté-Dry (3-4 minutes)

What You’re Doing: Drying + browning tofu a little so it doesn’t taste wet/spongy.

  1. Press Sauté. Add 1 tbsp oil.
  2. Add the crumbled tofu. Sprinkle 1 tsp salt over it.
  3. Cook 3-4 minutes, stirring occasionally, until it looks drier and you see some light browning.

Phase 3: Deglaze (30 seconds)

  1. Pour in 1/2 cup water.
  2. Scrape the bottom firmly with a wooden spatula until nothing is stuck. (This is how you avoid BURN.)

Phase 4: Dump + Pressure Braise (10 minutes HP, QR)

  1. Dump: Add tomatoes, chipotle in adobo (to your heat level), 1 tsp cumin, and 1 tsp garlic powder. Stir.
  2. Pressure Cook: High Pressure 10 minutes.
  3. Quick Release: Vent immediately (QR).

Phase 5: Finish (0-2 minutes)

  1. If it looks watery, press Sauté for 1-2 minutes to boil off excess and thicken.
  2. Taste and adjust:
    • More salt if it tastes flat
    • More adobo sauce if it needs heat/smoke
  3. Optional: squeeze lime juice over the top after cooking.

How to Eat It (The Bowl / Taco / Burrito)

  • Over rice: Use your standard rice method (see chipotle_burrito_bowl.md for the “2 cups liquid” sequential baseline).
  • Single serving: Pair with simple_rice_bowl.md (PIP bowl-on-trivet method).
  • Tacos/burritos: Spoon into tortillas, add cheese, sour cream, hot sauce.

Recipe-Specific Notes

  • Best storage: Store sofritas separately from rice (less soggy).
  • Reheat: Microwave until hot, then add a hit of lime (or hot sauce) to wake it back up.

Why This Works

  • Sauté-dry first: removes surface water so tofu takes on sauce like “braised crumbles” instead of wet sponge.
  • Chipotle in adobo + fire-roasted tomatoes: gives smoke + heat + sweetness + acid without any chopping or blending.
  • Deglaze before dumping: clears the bottom so the cooker doesn’t think you’re burning.

Substitutions

  • No fire-roasted tomatoes? → Use regular diced tomatoes.
  • No chipotle in adobo? → Use 1-2 tsp chili powder + 1/2 tsp smoked paprika (less authentic, still good).
  • No tofu? → This same method works with ground turkey (sauté-brown longer), but then it’s not “sofritas.”

Recipe-Specific Issues

  • Too spicy? Add sour cream/yogurt, or serve with extra rice/beans to dilute heat.
  • Too watery? Sauté 1-3 more minutes to reduce.
  • BURN warning? You skipped (or didn’t fully do) the deglaze. Scrape until the bottom is totally clean before pressure cooking.
